Seared tuna
2 Ahi tuna steaks at least 1 inch thick
2 teaspoons canola oil
House salt
Black peppercorns in a pepper mill

Pat the fish dry and coat both sides with the oil, 1/2 teaspoon oil per side, and sprinkle
liberally with salt and freshly ground black pepper

Heat a saute pan over medium high heat for 2 minutes. Add the tuna and cook until
you see the cut side of the tuna turn opaque, 2 to 3 minutes. The steaks should have
released themselves from the pan. If they are still sticking, don't force them, let them
sear until they release. Turn the steaks over and repeat as with the first side

Transfer Seared tuna to serving plates and serve immediately
