Melon salad with mint simple syrup
Infinitely refreshing

Recipe easily doubles or triples

2 cups seedless watermelon balls
2 cups Muskmelon/cantaloupe melon balls
2 cups Honeydew melon balls
3/4 cup Mint simple syrup (recipe follows)
1 teaspoon sea salt

Tumble the melon balls into a large bowl. Pour over the mint simple syrup and salt and
toss to combine

Melon salad with mint simple syrup can be served at room temperature, or chill in a
large metal bowl 4 hours and serve cold

Mint simple syrup

In a saucepan, combine 3/4 cup water and 1 1/2 cups sugar over medium heat. Bring to a
boil, then reduce heat and simmer for 5 minutes, until the sugar has dissolved. Take pan
off heat add 2 tablespoons finely chopped fresh mint

Let the mint steep while the simple syrup cools to room temperature. Mint simple syrup
can be strained or not as desired
