Jane's hearty lasagna
My mother's recipe. Childhood favorite, uncomplicated, delicious

Serve with
Spinach salad and Garlic cheese bread

For the sauce
1 medium yellow onion, diced  
2 tablespoons butter or vegetable oil
2 pounds ground sirloin   
1 15 oz can tomato sauce
1 12 oz can tomato paste
1/2 tomato paste can filled with water (7.5 ounces)
Ground black pepper
1 teaspoon dried oregano
1 tablespoon granulated sugar

For the cheese
2 cups large curd cottage cheese     
2 eggs, lightly beaten  

For the noodles and final assembly
9 lasagna noodles, boiled
9 ‘shingles’ sliced mozzarella, plus more for patching
1 cup grated Parmesan cheese

Heat oven to 350 degrees. Lightly oil a 9 x 13 inch baking dish

For the sauce
Saute the onion over medium heat in the butter or oil until limp and golden add the
ground sirloin and cook until it is no longer pink; drain the grease. Add the rest of the
ingredients, one at a time, stirring to incorporate and simmer 1 hour until flavors meld;
taste to correct seasonings. Keep warm

For the cheese
Mix together the cottage cheese and eggs, set aside

For the noodles and final assembly
Lay 3 noodles along the bottom of the pan
Add 1/3cottage cheese mixture in an even layer
Add 1/3 sauce in an even layer
Lay 3 slices mozzarella, patching with additional cheese
Sprinkle 1/3parmesan in an even layer

Do this two more times for a total of 3 layers

Bake at 350 degrees about 1 hour until cheese is bubbling hot

Allow to set for 30 minutes before slicing and serving
