Cream cheese frosting
De rigueur for Carrot cake and Red velvet cupcakes ... and a delicious dip for cookies
and biscotti

Cream cheese frosting is best made just before you are going to use it

Your cream cheese frosting will be a nice bright white if you use unsalted butter and
clear vanilla extract

16 ounces cream cheese, at room temperature
1 cup butter, at room temperature
2 pounds confectioners sugar, sieved
1 tablespoon pure vanilla extract

Whip the cream cheese and butter together until fully incorporated. Continue
whipping while sprinkling in the confectioners sugar 1/4 cup at a time. Flavor with
vanilla extract and whip smooth
