Best of class brownies
Ingredients
1/2 cup butter
1 cup sugar
2 whole eggs
1 teaspoon pure vanilla extract
1/3 cup unsweetened cocoa powder
1/2 cup flour
1/4 teaspoon salt
1/4 teaspoon baking powder
1/4 teaspoon instant espresso powder
1 cup chocolate chips

Method
Heat oven to 350 degrees Fahrenheit. Line an 8 x 8 inch baking pan with a foil sling
including enough foil to hang 4 1/2 inches beyond the pan on both sides. Spray the
interior with cooking spray and set aside

Melt butter in a large saucepan. Remove from heat, and stir in sugar, eggs, and vanilla
extract. Beat in cup cocoa, flour, salt, baking  powder and espresso powder. Fold in
chocolate chips

Scrape batter into prepared pan, push into corners and smooth to an even layer

Bake 25 to 27 minutes. Do not overbake

Remove from oven to a cooling rack and cool to room temperature

Best of class brownies can be enjoyed right after baking, or remove brownies and foil
sling from pan. Fold the foil wings over the brownie base and freeze overnight.
Remove brownies from freezer, thaw to room temperature, peel the foil off and cut
into desired sizes. Freezing the brownie base overnight will make the brownies extra
chewy
