Apple cake
2 cups sugar
4 cups peeled, cored and chopped apples
1/2 cup vegetable oil
1 cup chopped toasted pecans
2 eggs, lightly beaten
2 teaspoons pure vanilla extract
2 cups flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon Extra fine salt

Whipped cream, for service

Set oven rack to center position and heat oven to 350 degrees Fahrenheit. Grease and
flour a 9 x 13 inch metal baking pan

Combine sugar and apples in a large bowl

Whisk together oil, pecans, eggs and vanilla in a medium bowl. Pour the egg mixture
over the apples and mix thoroughly

Sieve flour, baking soda, cinnamon and salt over the apple mixture and stir everything
together thoroughly

Scrape mixture into prepared pan. Bake 55 to 60 minutes or until the cake just begins
to pull away from the sides of the pan and the center springs back when lightly
touched in the center

Remove cake from oven and allow to cool 20 minutes

Slice Apple cake into squares and serve with Whipped cream
