Ingredients
2 limes
1 teaspoon House salt
2 cloves garlic, smashed and peeled
2 serrano chilies, stemmed and cut into thirds
4 Hass avocados
1 medium bunch cilantro, minced
4 scallions, green tops only, thinly sliced on the bias
Method
Cut a lime into quarters and each quarter in half and drop into the bowl of a food
processor fitted with the metal chopping blade. Juice the second lime into a glass and
add the salt and stir. Add the salted lime juice to the food processor. Add the garlic
and chilies. Pulse the ingredients 10 times in 1 second intervals, scrapping the sides of
the bowl down half way through. Set the resulting sofrito aside
Cut the avocados in half, remove the pit and scrape the flesh into a medium bowl. Add
the sofrito to the avocados before mashing with a fork or pastry blender. Fold in the
cilantro and scallions. Taste for salt
Serve Guacamole with your favorite corn tortilla chip
