Crispy tater tots
There are some things at the supermarket that are there for their sheer convenience,
like hamburger buns. Who wants to the time and acquire all of the ingredients, tools
and special equipment to make their own hamburger buns ... OK, I know a few people
but in general all of those great convenience items at the supermarket save people a
lot of time

Having said that, I do believe that homemade Tater tots are worth the time. They are
easy to make with very few ingredients and no special equipment is required

Ingredients
Russet potatoes, 2 1/2 lbs peeled, chopped into 1 1/2 inch chunks
1 cup water
2 1/4 teaspoons salt
Black peppercorns in a pepper mill
1 1/2 tablespoons flour
Canola oil, for frying
Extra fine salt

Method
Potatoes, water, salt in food processor, 12 pulses until uniform. Strain through fine
mesh strainer, press liquid out

Cook potatoes in a bowl in microwave on high for 8 to 10 minutes until cooked
through and dry. Season with pepper

Add flour and mix thoroughly

Spread over foil lined baking sheet to cool, 8 minutes

Move potatoes with foil to a square baking pan, press smooth and even. Freeze for 30
minutes

Slice into tot shape, 6 cuts across by 8 cuts across

Heat oil to 375 degrees Fahrenheit

Use a spider to load a few tots into the hot oil, 5 to 7 minutes until golden

Drain on wire racks over baking sheet and sprinkle lightly with extra fine salt

Keep warm in 200 degree oven and fry the second batch

Serve warm or cool to room temperature and freezer in freezer bags
